Peanut Butter Fudge

As early as the 15th century Africans ground the peanut to make a stew. The Chinese made a peanut sauce and the American Civil War soldier made peanut porridge.

In 1890 George Bayle of St. Louis, MO, USA, ground peanuts into a butter as did the Kellogg brothers (cereal empire) although unsuccessfully. They steamed the peanuts before grinding instead of roasting them. Big mistake.

In 1922 Joseph Rosefield of California, USA, increased the shelf life of peanut butter by mixing the peanut oil with the butter. And now, Procter and Gamble produces 250,000 jars of peanut butter each and every day. Thanks Mr. Bayle!
