Vanilla Walnut Fudge 

Each seven to nine inch vanilla bean retails for up to $3.00 and each bean produces about 1/2 teaspoon of tiny black seeds. 1/4 teaspoon can flavor a recipe for 5 people.

Real, pure vanilla extract has about a 35% alcohol content while imitation or adulterated vanilla extract has much less. The fake vanilla may have a wonderful aroma but the flavor is weak. And when you cook with vanilla be sure to put it in the recipe as late as possible as it will begin to evaporate as soon as it gets hot, thus depleting the flavor value.

The empty bean pod is useful in soups and sauces and can be reused. Vanilla enhances a variety of products: desserts, seafood, perfume, tobacco and Phenomenal Fudge!
